Tasting the oil

Olive groves | Tuscan oil  > Tasting | Purchasing | Running the estate | Picking

For tasting purposes, the new olive oil should be served as is (without cooking).  

Some serving suggestions:

On slices of toast (bruschette)

On slices of orange, with salt

With a beef, fish or vegetable carpaccio

As pizzimonio (batons of raw carrots, celery, artichokes, fennel, that are dipped in the oil and eaten):  or a variant - bagna cauda  where the oil has a crushed anchovy fillet added to it and is gently warmed

On plain pasta, eaten with salt

Grilled meat (cooked with no added fat or oil), served with a drizzle of oil and lemon

A teaspoonful each morning….

In the same way that certain wines go with certain foods, the piquant Tuscan olive oil is particularly suited to meat and bruschette.
